Viking Hotel Waterford Launch Refurbished Superior Rooms

Thursday 26 June was a special evening at Viking Hotel Waterford as we officially launched our newly refurbished Superior Guest Rooms. With live music, great food and drink, and a guest list full of local leaders, familiar faces, and friends of the hotel, the event was a warm celebration of everything our team has worked hard to create. 

The new rooms have been in place since spring, but this was our first chance to properly mark the occasion in person. 

Guests Who Made the Night 

We were delighted to welcome an incredible mix of attendees, including: 

  • Mary Butler TD, Government Chief Whip and Minister of State at the Department of Health 

  • Kevin Doolan, President of Waterford Chamber 

  • Noel and Noeleen Kelly, owners of Viking Hotel Waterford 

  • Jim Murphy, CEO, PREM Group 

  • Paul Dempsey, COO, PREM Group 

  • Hugh Wallace, Douglas Wallace Architects 

  • Damien Meehan, Director, Douglas Wallace Architects 

It meant a lot to see so many supporters and long time connections come together to celebrate this new chapter for the hotel. 

A Warm, Relaxed Atmosphere 

The event took place in the Wooden Pestle Restaurant, where guests enjoyed a relaxed evening of food, conversation, and music. The mood was light and sociable, with plenty of catch ups and introductions. 

Live music added to the energy of the evening while guests sampled bites from the kitchen and explored the newly refurbished rooms, which were open to view. Feedback on the design, layout, and style of the new rooms was overwhelmingly positive, especially the bathrooms, which now offer a calm spa style touch. 

A Thoughtful Design 

Our special guest for the evening was architect Hugh Wallace, who led the redesign. Guests had the chance to speak with Hugh and Damien Meehan from Douglas Wallace Architects, gaining insight into the design process and hearing directly about the inspiration behind the new look. 

The Superior Rooms now offer a mix of style and function with: 

  • Locally inspired artwork 

  • A calm, neutral palette 

  • Thoughtful lighting and layout 

  • Spacious, bright bathrooms with high quality finishes 

General Manager Karen Dollery welcomed guests and spoke with many throughout the evening, saying: “We’re so proud of the rooms and how they’ve been received. It was great to welcome everyone to the hotel on the evening and take a moment to celebrate”. 

A Team and Community Effort 

The evening also gave us a chance to thank those who supported the refurbishment from day one. That includes our owners Noel and Noeleen Kelly, PREM Group who operate the hotel, and every staff member who played a part in making the rooms and the launch event come to life. 

Having so many partners and supporters together in one room reminded us how connected Viking Hotel Waterford is to the city and region. It was a celebration not just of rooms, but of people.
